Baked spinach with ricotta and parmesan

Serves 2 generously
1 HEA + 1/2 HEB + 0.5 syn per serve

400g frozen spinach
1 clove garlic, thinly sliced
2 tbsp white wine (1 syn)
1 tbsp olive oil (HEB)
85g ricotta cheese (HEA)
30g parmesan cheese (HEA)
2 eggs, beaten
Freshly grated nutmeg
Salt & pepper

Preheat the oven to 200C

Defrost the spinach in the microwave (I just put it on high for 5 minutes, from frozen) and drain the excess moisture through a sieve. It doesn't have to be completely drained

Heat the olive oil on a low to medium heat and cook the sliced garlic slowly until it turns golden brown

Add the drained spinach and stir well. Season with salt and pepper, add the wine and allow to evaporate. Take off the heat to cool slightly

Mix in the parmesan and ricotta and a good grating of nutmeg. Mix well

Mix in the beaten eggs and tansfer to a baking dish sprayed with spray oil

Bake for 15 minutes and serve with a steak or fish. I had mine with pan fried fish and SW chips!

Subscribing so I remember how to make this. It looks SO good! All of the ingredients are on my shopping list (including the Sea Bass :))
