Beef & Baked Bean Cottage Pie - 294cal p/s

125g sweet potatoes, peeled and diced
1 tbsp semi-skimmed milk
100g lean minced beef
1 red onion, finely chopped
1 garlic clove, crushed
1 carrot, grated
1 x 200g can baked beans
150ml water
1 tbsp gravy granules
Salt and freshly ground black pepper

1. Preheat the oven to 200C, 400F, Gas Mark 6.
2. Boil the sweet potatoes in water until soft. Drain and mash, adding the milk and seasoning with salt and black pepper.
3. Meanwhile, heat a non-stick pan and dry-fry the mince until lightly browned. Add the onion and garlic and cook for 3-4 minutes.

4. Add the carrots and baked beans to the mince mixture and pour in 150ml water. Bring to a gentle simmer, then stir in the gravy granules and continue to simmer for a further 20 minutes to allow the sauce to thicken.
5. Check the seasoning then transfer the beany mince to an ovenproof dish. Top with the mashed sweet potatoes and lightly spray with oil spray.

6. Bake in the top of the oven for 20 minutes until golden brown. Serve with fresh veg of your choice.
