Butternut squash & ginger soup

Experimented with a butternut squash and i came up with this, my daughter & partner loved it :)

Butternut Squash & ginger soup

1 butternut squash
small onion
1 large or 2 small cloves garlic
1 med potato
veg stock
sprinkle of ginger
sprinkle of cinnamon
Seasoning

Method
1. fry onions till softened then add crushed garlic & fry 2-3 mins
2. add cubed butternut squash & potato and just cover with stock
3. add ginger & cinnamon and cook till squash & potato softened
4. liquidise and return to pan and season to taste

About 150 cals a bowl
 
Hi Poppyuk, that sounds lovely! I do a soup with similar ingredients but also adding sweet potato, fresh red chilli and bacon- the saltiness of the bacon balances nicely with the sweetness of the sweet potato and BNS and then you get a real kick from the chilli and ginger! I love it!!X
