can you heat quark?

Ive got some pork loin steaks for dinner and was going to make some kind of creamy sauce with quark. Has anyone tried this, maybe with a little veg stock or will it just split and go horrible? Any advice or ideas for a creamy sauce would be much appreciated! x
 
Yes you can heat quark, that will definately work & will be so yummy.
 
I add chilli flakes and black pepper to mine - and stir through pasta - yummy
 
I find it seperates unless you put it right in at the end.

Not good to use for any oven baked dishes.
 
I think it's less likely to separate if you mix it with egg and cheese. Whenever I haven't mixed it with egg it has gone all weird and watery in the oven and on the hob. Kind of like water with loads of white bits! Not good! But when mixed with egg I have made lovely lasagna, canneloni and moussaka
 
I've never had a problem using it in oven baked dishes I use it to make quiches, lasagne and cake :D
 
i have only ever 'stirred it through' not cooked it in a pan or oven though.
 
the key is not to mix it in straight from the fridge, or as it hits something hot it will split and curdle.

You need to either take it out of fridge a good few hours before or mix it with a little bit of the juice/sauce to bring it to room temperature.
