Celeriac is my new spud!

What can I say- I'm Irish! :D Potatoes are something I missed badly but currently tucking into a hearty bowl of chicken and mushroom stew with celeriac mash with relish.

It ain't gonna win any beauty pageants and you lose a fair portion in the prep but celeriac is so easy to peel compared to wrestling a swede. Chop up into good sized even pieces just right before you're going to cook it, boil for 15 mins or so. Allow to dry out a bit on a low heat, a dollop of mustard and a good mashing. Easy peasy! :)Xx
 
I'm intrigued! What does it taste like? As long as it isn't aniseedy like fennel (bleugh) then I might give it a go once I'm cruising :)
 
Tastes very subtly of celery but once cooked with a few spices (mustard, lemon pepper, curry powder, or smoked paprika) it tastes quite like you're eating spuds. :)Xx
