Celeriac mash

Can you keep leftover celeriac mash in the fridge overnight and zap it in the microwave next day? I know celeriac has to be used as soon as you've peeled/sliced it, because it reacts with the air & goes a funny colour. So will that affect my mash?

Any tips on making the mash extra tasty will be very welcome, too!

Nah i reckon you'll be fine to leave it till the next day LM. Once it's cooked the chemical reaction changes the compound of the molecules in it so i think you'll be fine to re-heat after a while. I love celeriac mash!! Yum yum.

I've put a little cream in mine before but tend to stick to butter/garlic butter (for a change).. with a sprinkle of black pepper. I guess grated cheese would be nice mixed in with it.

I've kept it for a couple of days at least LM.

Another tip is to seal it like we do with Pate. Put it in the container still hot and then put a knob of butter on before you put it in the fridge, once it's melted it will seal the surface and kepp longer. :)
