400g sweet potatoes
400g old potatoes
2 onions, roughly chopped
100g low-fat Cheddar, e.g. Rosemary Conley's Less Than 5% Fat Mature Cheese
Salt and black pepper
Fresh herbs, to garnish


1. Preheat the oven to 200C, 400F, Gas Mark 6.
2. Peel the potatoes. Cook the sweet potatoes and old potatoes together in a pan of boiling water along with the onions.
3. When the potatoes are soft, drain well, then mash the potatoes and onions until smooth. Season, then mix in the grated cheese and pile into an oven-proof dish.
4. Bake in the oven for 15 minutes or until golden brown.
5. Garnish with herbs of your choice and serve with baked beans or grilled tomatoes and salad leaves.
