Cheesey Baked Mushrooms

Ingredients
4 large flat mushrooms
250g Quark low-fat soft cheese
2 spring onions, finely sliced
1 garlic clove, crushed
1 tbsp dried mixed herbs
A little lemon juice (i.e. squeeze of Jif lemon)
Salt to taste
Freshly ground black pepper
1 blue portion pot/20g grated low-fat Cheddar

Instructions
1. Preheat the oven to 200C, 400F, Gas Mark 6.
2. Remove the stalks from the mushrooms. Finely chop the stalks and mix them with all the remaining ingredients, except for the grated cheese.
3. Spoon the mixture on to the mushrooms and top with the grated cheese.
4. Bake the mushrooms in the oven for 15 minutes or until golden brown. Serve with a tossed mixed salad.
