CHICK PEA & RAISIN CAKE
INGREDIENTS:
1 tin of chick peas
2 eggs
6 tablespoons of granulated sweetener
1 teaspoon of baking powder
1 teaspoon of vanilla essence
56g raisins
1 teaspoon of almond essence
METHOD:
Put the chickpeas and eggs in a mixer and blend until smooth.
Add the rest of the ingredients folding in the whole raisins
Line a large square cake tin with baking parchments and bake in the oven – the larger and flatter the better.
GAS 4/ELECTRICITY 170 FOR 45 MINUTES
*6 SYNS FOR THE WHOLE CAKE ON GREEN and EXTRA EASY
· You can also add 1 tablespoon of caster sugar (add to SYNS) to sprinkle over top if desired (gives crispy topping!)
· You could replace the RAISINS with Grated apple and have a syn FREE cake!
· You could use apricots and have as Healthy Extra B Choice
