Chicken Noodle Soup

Oriental chicken noodle soup

Syn Free on EE (fills 2 bowls)

* 900ml / 1 1/2 pts chicken stock (i usually make with 2 stock cubes for added flavour)
* 2 chicken Breasts (cut into small strips or cubes)
* 1 tsp chopped root ginger
* 1 clove garlic
* 1 Carrot (cut into chunky strips or Julienne, depending on what you prefer)
* 1 nest of egg noodles
* 2 tbsp sweetcorn
* 2 Spring onions (shredded)
* 2 tsp soy sauce

* Pour stock into saucepan, add the chicken, ginger, garlic and carrot.
* Bring to boil and simmer for 20 min.
* Meanwhile put the noodle nest into a bowl, boil the kettle and cover the noodles with the boiled water... once soft run under cold water to make them cold)
* Once the chicken in the stock is cooked
add the sweetcorn, spring onion, soy sauce and noodles to the pan
* Bring to boil and then serve!
