Chicken Pappardelle

Serves 4
Each serving is:
Syn free on extra easy
7.5 syns on green
15 syns on red

Ingredients:
Frylight
1 red onion, thinly sliced
1 carrot, diced
2 celery sticks, diced
2 garlic cloves, crushed
4 skinless chicken breast fillets, cut into pieces
100ml chicken stock
400g chopped tomatoes
4 tbsp of chopped parsley
350g dried pappardelle or any dried pasta/spaghetti of your choice
150g rocket leaves, chopped
salt & pepper

Method:
Spray a saucepan with Frylight. Add the onion, carrot, celery & garlic & stir fry gently for 5 minutes.

Add the chicken & stir fry over a medium heat until lightly coloured. Reduce the heat slightly & stir in the stock & tomatoes.

Cover the saucepan & cook, stirring occasionally, for 8-10 minutes or until the tomatoes have become very soft or until the chicken is cooked through. Stir in the parsley.

Meanwhile cook the pasta according to the packet instructions until tender. Drain well & transfer to a serving bowl.

Stir the rocket into the sauce & season to taste. Spoon the sauce over the pasta & serve immediately.

Myself and the husband don't like celery so I was just going to leave it out. Mushrooms are a great substitute. Will let you know how I get on.

We both enjoyed it and it made a nice change from spag Bol xxx
