Chicken pasta salad

    Start Weight:
    Goal Weight:
    Healthy Eating
    Serves 1, 1/2 HEA and 2.5 syns


    Small handful of pasta
    Small chicken breast
    1/2 small can sweetcorn
    1/2 red pepper
    2 big gherkins
    1 shallot
    1 celery stalk
    Salt & pepper
    2 laughing cow light (1/2 ish HEA)
    1 tbsp hellmann's light mayo (2 syn)
    1 tsp wholegrain mustard (1/2 syn)
    Green salad
    Drizzle of good balsamic vinegar

    Season the chicken breast with salt & pepper, sear on both sides in a hot pan and then transfer to a hot oven for 10 minutes.

    Meanwhile cook the pasta in salted water

    While the pasta is cooking, finely chop all the veg except the green salad and sweetcorn (obviously lol). stir in the the laughing cow light and mayo and season with salt & pepper.

    When pasta is cooked, rinse in cool water to bring down the temp. Take cout chicken and chop into cubes. Stir into the veg mayo mix.

    Drizzle some balsamic vinegar on the green salad and spoon the pasta on top of the greens.

    Eat! :D
