Chinese Chicken

    Diet:
    Calorie counting
    Chinese chicken serves 4 4 syns on green or Extra easy (add 6 syns if not using chicken as B choice)

    4 chicken breast Diced

    Marinate
    2 tbsp soy sauce
    1tbsp Sherry OR rice wine
    1 teaspoon Corn flour

    mix soy, sherry & corn flour until smooth. pour over chicken, toss to mix and leave to marinate for 15 minutes (longer if possibe.)

    Sauce
    100g canned or fresh pineapple, 3 teaspoon corn flower, 3tbsp soy, 4tbsp orange juice, 5 tbsp stock, 1 teaspoon sweetener, 1tbsp white wine vinegar, 1 tbsp tomato puree & 1/2 a red pepper died.

    mix all ingrediants together, heat gently until thickened, remove from heat and keep warm.

    Stir fry marinated chicken for 5mins, add sauce heat through then serve with rice or noodles x
