I had an idea after cooking the sw chicken bhuna and the spring greens going all crispy.
I mixed up the spring greens with a mix of a tablespoon of soy sauce, some salt and about 3 table spoons of sweetner and tossed it with the spring greens then layed them out on the baking tray for about 10-15 mins, before they burn. It actually tasted really nice! Not as greasy :D
