Creamy Celeriac Soup

Another recipe adapted from WW. Be sure to eat some protein with it - perhaps a good-sized dollop of FF fromage frais on the top or accompany with a helping of meat.

This is very simple, very tasty and the "creamy" bit comes from the celeriac itself.

Serves 4

1 large onion, chopped
4 celery sticks, chopped
400g celeriac, peeled and diced
1 bay leaf
1.2l vegetable stock

Stir-fry veg in a large pan for 4 mins until beginning to soften.

Add bay leaf and stock. Bring to boil, cover and simmer for 20 mins until veg are soft. Remove from heat, take out bay leaf and blend until smooth.

Gently reheat to warm through.
 
Delicious -now the tricky part - not to eat the whole lot!!

I am so going to try that for my next pv day, especially if the weather stays like this. Anyone know where to get low fat stock cubes from? I can only find low salt.
