Crispy Coconut Chicken (366 calories)

Serves 4

600g of chicken breast (4 breasts)
80g dessicated coconut
Black pepper (to taste, I put quite a bit in)
1/4 teaspoon garlic powder
1 egg, lightly beaten

Cut the chicken up into strips and coat in the egg. I just plonk it into the bowl with the egg and then stir it up.

Mix the coconut, pepper and garlic powder and then coat the chicken in the mix. Again, I transfer the chicken, minus any spare/loose egg into the mixture and stir it up which coats it fairly well.

You then have two options, depending how healthy you want it to be!

Either... shallow fry in hot oil.
Or... place on a baking tray, spray with fry light or something similar and cook for about 20 minutes until the chicken is cooked through and browned, turning once half way through.

It crisps off just like breadcrumbs but it's healthier and, I think, tastier!

As you can see, I served it with sweet potato chips and pepper. I had some mayo but actually didn't end up using it as everything had such a nice flavour.
 
looks scrummy, when I was 14 I made coconut chicken breasts with a curry and I've always wanted to make it again, thanks for the CC friendly opportunity (think the curry is a lost cause as it had a carton of double cream in it!)
 
I actually love it! I might make it this week again, nom!
