250g red lentils
1 onion - chopped
1 carrot - diced
1 potato -diced
1 large can tomatoes

2 tbs curry powder
1 tsp chilli powder
2 tsp ground coriander
2 tsp ground cumin
1 tsp turmeric
(or you could use your own preferred combination on spices).
2 tbs lemon juice
2 tbs tomato puree
1 tsp splenda/canderell

600g diced chicken breast or lamb steaks
(You could use stewing steak but that takes longer to cook).
1 onion - sliced
1 or 2 peppers - cut into strips
150g mushrooms - sliced

Spray large pan with fry-light, soften onion, carrot & potato. Make a paste with spices etc. and add to pan, cook gently 1 minute. Add lentils and cover with water by about 1". Simmer until tender.
Add 1 can tomatoes & blitz with blender or put through seive.
Spray a large frying pan with fry-light, brown meat and add veg, add this to sauce and simmer for about 1/2 hour. If you are using stewing meat, cook in a slow/moderate oven (covered) for about 1 to 2 hours (or until tender).
This makes about 6 portions and is fab for freezing.
Blimey, it looks complicated written down, but honestly it isnt. I use a hand held blender, its worth buying one for sauces & soups (Tesco do one dead cheap)
