Custard Sauce


Not very good at this!

OK I have replaced the sugar in this with splenda, but this is what I have just made for my trifle.
300ml skimmed milk
1 vanilla pod ot 1 tspn vanilla essence
4 egg yolks
1 tbspn splenda

1. Reserve 3 tbspns of milk. Place remaining milk and vanilla pod in a pan and bring to the boil.

2. Remove from the heat and leave to stand for 15 mins

3. Place egg yolks splenda and the 3 tbspns of reserved milk in a bowl and beat until thick and creamy.

4. Remove vanilla pod from milk and pour milk onto egg mixture.

5. Strain mixture into a heavy based pan and cook, stirring until custard thinly coats the back of a spoon.

Of course I cheated by using vanilla essence (not sure if I still needed to warm the milk first or not, but I did). I also couldn't be bothered to strain my custard and it looked a little bit lumpy at the end so I just blitzed it with my stick blender. Tastes divine adn you woudn't know it was made with skimmed milk. Has now been put on top of my trifle to cool. Can't believe I have nearly fnished my huge Dukan trifle with no naughties!

I am guessing you could also make this into a chocolate sauce by adding some reduced fat cocoa.
