Dukan blinis

    Have any of you tried making oat bran blinis instead of the galette or pancake, which for me always breaks up? You make the recipe as he says on the site or in the book but don't add sugar substitute, keep savoury, add about a half teaspoon of baking powder to the dry bran b4 adding the egg, f frais or quark. use the whole egg, and maybe add a bit more milk if you use Quark, so it's like fairly thick cream. Drop big spoonfuls onto a big non stick frypan or griddle if you have one and turn with a palette knife. Amazingly good with ham, roast beef, smoked salmon, prawns. You can mix Greek 0% yogurt with dill and black pepper as a dressing with any of these, or maybe yogurt with wholegrain mustard with beef or ham. Really nice.

    I started Dukan beginning of August. Lost loads to begin with but then went on a cruise. Did quite well really by not actually putting any weight back on! Have been stuck at same weight now for almost 3 weeks! Am being really good and sticking to diet 98% in the hope that weight will start to shift again very soon.
    Meanwhile I have a couple of recipes to go with mini savoury gallettes.

    Smoked Mackerel Pate

    I think this is absolutely delicious and serve it with mini savoury gallettes on PP days and Vegetable Crudities on PV days

    Ingredients

    · 1 smoked mackerel fillet (Plain, not peppered)
    · Quark or fat free plain Yoghurt or a mix of both
    · Lemon Juice to taste
    · Pepper
    Method
    1. Remove the skin from the mackerel
    2. Place mackerel in smallish bowl and mash it up with a fork
    3. Add quark/yoghurt and blend together until smooth and a consistency of your liking
    4. Add lemon juice and pepper to taste.

    Serve with mini gallettes or Vegetable Crudities

    Low Fat Quick Chicken Liver Pâté with Orange and Sherry
    Spoil your guests with this deliciously rich, creamy pâté that makes a very quick and easy to prepare starter.

    Serves:
    6
    Ingredients
    · 1 or 2 tbsp water
    · 400g pack Waitrose chicken livers
    · 1 shallot, finely chopped
    · 1 clove garlic, crushed
    · 1 tsp fresh thyme leaves
    · 2 tbsp dry sherry
    · 100g Quark or 0% Total Yoghurt or mix of both
    · Grated zest of 1 orange
    Method
    1. Warm the water and ‘sauté’ the shallot and garlic until soft.
    2. Add the chicken livers, thyme leaves and salt and pepper to taste
    3. Cook for 8-10 minutes over a medium heat, stirring frequently until cooked through,
    4. Add the grated orange zest and sherry and simmer for 30 seconds. Transfer the mixture and all the pan juices to the food processor or hand blender bowl along with the Quark/Yoghurt.
    5. Whizz to a smooth paste.
    6. Spoon the mixture into 6 small ramekins or small serving dishes and allow to cool.
    7. Take the pâté out of the fridge 15 minutes before serving with mini ‘gallettes’ or vegetable crudities.
    8. Cook's tips
    This pâté is lovely served with a winter salad. Torn chicory leaves, watercress and slices of orange

    And finally
    Cheesecakes (Mini Lemon)
    Ingredients

    Serves 4 - 5

    · 250g Tub Quark
    · 1 pot Weight Watchers Lemon/lime Yoghurt
    · 2 Eggs
    · 2 tbsp artificial sweetener
    · 1 tbsp Agar FLAKES
    · ½ tspn Vanilla Extract
    · Grated Zest of 1 lemon
    · Juice from half Lemon
    · 9 or 10 silicone cup-cake cases.

    ASDA sell Agar flakes called vegetarian gelatine.
    They also sell inexpensive silicone cup cake cases

    Method


    • Pre-heat oven to gas 4; 160*
    • Place 9 or 10 silicone cup-cake cases on a baking tray or similar
    • Mix all ingredients together until smooth
    • Pour into silicone cup-cake cases. Fill almost to top and wipe up any spills
    • Bake in pre-heated oven for 30 minutes
    Turn oven off BUT leave in oven to cool before turning out - the Agar will set on cooling.
