EE Syn free 'Leftover Risotto'

I made this last week and ate it twice...lost 3 lbs that week too so it is def a meal i will have again!

1 mug/cup of risotto rice
1 onion
any amount of mushrooms
any amount of peppers
Any peas/sewwtcorn or veg u have left over
and left over meat! (I used chicken)
3 stock cubes (veg or chicken work best)
3 pints of water (could use more if cooking veg)
fry light
3 (or 5) extra light laughing cow cheese triangles (HxA)
seasoning if you like

spray pan with fry light
add rice and stir
cook for 2-3 mins adding more fry light if needed (the rice needs to have a glaze)
add onion and pepper (all raw veg except mushrooms)
add some of the stock (200mls) and stir occasionally.
When stock had gone, add some more and stir
Continue to do this until all the stock has been cooked away.
When 3/4 of way through the stock add the mushrooms (they may make it change colour) and any other cooked veg like peas, sweetcorn, left over carrots etc.
Add the cooked meat.
Keep stiring.
Break the laughing cos cheese triangles up and add, stir until melted. These will help thicken up the risotto.

You can basically add any flavourings to it or any veg/meat. it's a nice way to use up leftovers!

Serve with huge salad!!! yummy!!!

If not using laughing cows as healthy extra A i believe they are about 1 syn each, you may wanna check this.

I think this amount is ideal for 2 if having salad and obviously the more veg u add the more you have but as it is syn free u can eat it all! I did :D :D :D ENJOY!!!
