Has anyone got the recipe for the Thai Chicken cakes from the new Extra Easy book, tried them last night in group (they are just spicy chicken burgers, so tasty, want to do them on my BBQ tomorrow but can't find the receipe anywhere...
Here it is.
Serves 4 (makes 12 cakes)
Ready in about 25 mins.
4 large skinless and boneless chicken breasts, roughly chopped
2 garlic cloves, peeled and crushed
1/2 / 1cm piece fresh root ginger, grated
6 spring onions, finely chopped
A large handful of fresh coriander ( leaves and stems) chopped
A large handful of fresh mint leaves finely chopped
1/2 lemongrass stick, finely chopped
Finely grated zest and juice 1 lime
1 red chilli, deseeded and chopped
Salt and freshly ground pepper
Fry light
To serve.
Cucumber and carrot ribbons (use a veg peeler or mandolin) with thinly sliced red onion drizzles with lemon juice.
1. Preheat your oven to 220c/425f/gas 7. Blitz everything for the chicken cakes (apart from the fry light) in a food processor until the chicken is finely ground and everything is well mixed. Divide the mixture into 12 portions and shape into small cakes.
2. Spray a large non-stick frying pan with fry light and cook the chicken cakes over a medium heat for 3-4 minutes, turning once. Transfer to a non-stick baking sheet and cook in the oven for 6-8 minutes. Serve immediately with the salad on the side.
