Extra Easy inspiration!

Hiya I have been doing slimming world for about three months now, I'm a bit of a slow loser (only lost 10.5lbs so far) but none the less I am really loving it!! Although I haven't yet been very imaginative with what I've been cooking I have tried quite a lot of the recipes and I thought I would post recipes and pictures of what I've been trying out along with some of my own recipes for a bit of inspiration.

SLIMMING WORLD COTTAGE PIE

Serves: 4
Syns per serving: Free on extra easy
908g/2lb potatoes, peeled and chopped
a small handful of parsley, chopped
6 tbsp fat free natural yogurt
Fry Light
1 red onion, peeled and chopped
1 red onion, peeled and chopped
2 carrots, peeled and chopped
2 celery sticks, sliced
2 garlic cloves, peeled and crushed
198g/7oz fresh or frozen peas
397g/14oz extra lean minced beef
400g can chopped tomatoes
1 tbsp concentrated beef stock
2 tsp dried oregano
1 egg, beaten
To serve
Steamed broccoli and cauliflower​
1. Preheat the oven to 200°C/Gas 6. Boil the potatoes in a large saucepan of lightly salted water for 15-20 minutes or until tender. Drain. Add the parsley and yogurt, mash until smooth and set aside.
2. Spray another pan with low calorie cooking spray, add the onion, carrots, celery, garlic and peas and fry for 5 minutes. Add the minced
beef and cook for a further 5 minutes. Stir in the tomatoes, concentrated stock and oregano,bring to the boil, then remove from the heat and transfer to four individual baking dishes.
3. Top each dish with the potato mixture and rough up with a fork. Brush with the beaten egg and bake for 30 minutes or until the top
is golden. Remove from the oven and serve with the steamed vegetables.

Mmmm this sounds amazing I am going to make this at the weekend I think just need to get a dish to cook it in!!

Woaw I completely forgot all about this thread!! Will be posting more recipes as soon as pos! Also am going to be making a lovely rich hazelnut and white choco cheesecake this week, not sure how it will turn out as I only just made it up myself lol but it should be nice, and it's 12 syns a slice so not too bad.

This recipe is basically just the slimming world pea curry, except it's more of a bean curry! I love the pea curry but I think it's a bit boring so I always try and bung in something else instead of just basic pea curry ingredients to make it more interesting.


Ingredients:
-1 tin baked beans in tomato sauce
-i tin chopped tomatoes
-1 tin kidney beans
-1 tin chickpeas
-tikka curry powder to taste (I would usually go for 2-3 big tablespoons)

1. Mix all ingredients together in a saucepan.
2. Heat until hot.
3. Serve with rice and veg or salad.

SYN FREE SPAGBOL!

Serves: 4
Ingredients:
-400/500g extra lean mince
-500g passata
-1 tin kidney beans
-2 tablespoons garlic powder/3 cloves real garlic
-8-10 mushrooms

Sorry ingredients are very aproximate, I usually just guess it!

1) Fry extra lean mince in a wok or large frying pan for 5 mins until all brown.
2) Add mushrooms and fry for a further 5 mins.
3) Add kidney beans, garlic powder and passata.
4) Bring to the boil, and turn to a medium heat for aprox 10 mins.
5) Serve with pasta and veg.

SYN FREE CHUNKY CHICKEN CURRY!!!

Serves: 4
Ingredients:
-600g passata
-4 cubed skinless chicken fillets
-Curry powder to taste (aprox 3/4 tablespoons)
-300g frozen/garden peas
-One onion chopped into biggish chunks
-Fry light

1) Fry chicken in a large frying pan or wok for 7/8 mins approx.
2) Add onion and peas and fry for a further 5 mins.
3) In a separate bowl or jug mix together passata and curry powder to taste.
4) Add passata and curry mix to chicken and veg.
5) Bring to the boil then turn to a medium heat for 5-10 mins.
6) Serve with rice or sw chips and veg.
