Fez lamb 200 calories per serving

    Serves 4

    400g lean lamb leg steaks cubed
    ¼ teaspoon ground ginger
    ½ teaspoon ground coriander
    1 teaspoon ground cinnamon
    1 onion chopped finely
    400g canned apricots in juice, drained and chopped, reserve the juice
    1 tablespoon of clear honey
    1 teaspoon of orange blossom water (optional)
    salt and pepper to taste

    Put the lamb, onion and spices into a pan, season with the salt and pepper and pour just enough water to cover, along with the reserved apricot juice. Bring to the boil and reduce heat to a simmer for 1½ hours until you have a rich sauce.
    Add the apricots and cook for a further 20 mins.
    Stir in the honey, and sprinkle over the orange blossom water if you are using it, then serve.

    Serve with potatoes or rice but count the extra calories.
