Gluten Intolerance - Question.

Question: ... is it possible to develop a gluten intolerance post a VLCD? :confused:

I started Lighter Life two years ago, and before hand I practically lived on white bread and pasta... Needless to say, I have not really been eating the stuff for a good two years now... But recently (due to my stupidness) have noticed that when I overdo processed white bread (which I haven't touched for a very long time) I get horrible stomach bloating, gas expulsions from both ends and need to run to the loo with terrible consequences!
I can tolerate wholegrain food, rye, oats and other grains fine in small quantities though...

Is it possible to develop an intolerance? I'm confused. My gut tells me it doesn't like bread. But it's unsupported because it doesn't always happen - only when I have more than a small amount per day?
