It is lovely! Better than the chippy! Someone else made it the other night and really liked it after having before and not enjoying it. I've had 3 friends make it that don't even follow SW and love it too! Thanks for the support :)
Hoping for a loss this week! ...fingers crossed... I think I've been very good!
 
Looking good :) I keep meaning tomake Chicken Jambalaya but the last time i made it the rice stuck to the bottom of the pan and it was a mare to clean lol x

If it's any good I'll post the recipe for you to try :)
 
So the Chicken Jambalaya was quite tasty. Here's the recipe.

Ingrediants
Frylight (I used the Olive Oil one)
2 onions, peeled and chopped
2 celery sticks, washed and chopped
chicken (I used a pack of mini breast fillets)
1 green pepper, chopped
1 red pepper, chopped
2 garlic cloves, crushed
1/2 tbsp of chopped frozen ginger (you could use fresh or probably 1tsp of ground ginger)
1 tsp cayenne pepper
1 tsp cajun seasoning
2 vegetable stock cubes
500 ml boiling water
tin of chopped tomatoes
tin of kidney beans
250g rice
salt and pepper
2 tbsp lemon juice (or lime juice)

1) Prep and cut the chicken , removing all visible fat. Chop the onions, celery, and peppers.
2) In a large pan (I used my wok) spary with frylight and add the onions and celery and crush in the the 2 garlic cloves and ginger. Cook for around 5 mins until the onions start to soften. Add the 250g of rice to some boiling water and start to cook it (I was not confident about the rice being cooked if I added it straight to the mix as the recipe called for I'd found)
3) Make up the 2 stock cubes with 500ml of boiling water
4) Add the peppers and chicken until it's cooking nicely, add the the cajun and cayenne pepper and 1/3 of the vegetable stock.
5) Once the chicken is cooked add the tin of tomatoes, drain your rice which will have had about 5 mins by now and add the the pan with the onions and chicken etc.
6) Add another 1/3 of the stock and simmer for a good 10 minutes, stirring so it does not stick to the bottom of the pan.
7) Add the kidney beans and the rest of the stock and simmer for another 10 mins, or until most of the liquid has been absorbed and the rice is cooked.
8) Add the lemon juice and season with salt and pepper just before serving

HEA - 250ml milk
HEB - 35ml porridge oats

Breakfast
35ml Porridge oats cooked with all milk and topped with fresh raspberries and strawberries
Options Choc Orange - 1 1/2 syns

Lunch
Jacket Potato and Spag Bol sauce
1 tbsp Lighter than Light Mayo - 1/2 syn
Pint of Tropical NAS with diet lemonade

2 Apples and a few grapes
Options Choc Orange - 1 1/2 syns


Dinner
Slow Cooked Chicken with Roasted Med Veg (Sweet Potato, Onions, Aubergine, Cherry Tomatoes, Peppers & Mushrooms) and Secret Roasters with Gravy - 3 syns
2 Pints of Tropical Squash and diet lemonade

Pudding - Cherry Quark Pudding - 5 syns

Total Syns - 11 1/2 syns

Some nice ideas in the book Lisa! It's all about traditional British Food..low syn or free ideas for how to do joints, well known dishes and lesser known traditional ones...some great ideas for main sides and some lovely puddings too by looks of it! :)

Nope I just defrosted them a little in the mic cos I couldn't wait for them to defrost! I think it's just cos the juice is sitting on top of the quark etc.
It ain't Angel Delight, but probably as good you can get on a diet..lol.. I enjoyed it anyway :)

Dinner
SW KFC Chicken, Beans, Homemade Slaw, SW Chips and Salad - 1 syn for Lighter than Light Mayo in Slaw
2 glasses of Diet orangeade

Options Choc Orange - 1 1/2 syns


Total Syns = 9 1/2 syns

So happy with getting back on track with a 2lb loss this week! Off shopping in a bit when the other half gets in from work and looking forward to getting some different things in to continue to mix up our meals again next week so off to write my shopping list with the help of my new books for inspiration :)

So I've spent a part of the afternoon researching recipes for SW KFC and woo..there's a fair few out there! Breadcrumbs....Cous Cous...Smash...to use as the topping. Boil the chicken first!?... So many variations and a lot of faffing in my opinion... so I've made my own version. If it comes out nice I will post the recipe! Can't wait! :)
 
Oh my days! The KFC Chicken was amazeballs!

The spicy coating was that! Spicy! So if you like a bit of a kick then you have to try this one!

I used the following-:

Pack of Mini Breast chicken fillets
Frylight
1 egg
100g of Smash
1 Oxo Chicken Stock Cube
1 tsp Cumin
1 tsp Cayenne Pepper
1 tsp Garlic Salt
1/4 tsp Mustard Powder
1 tsp Cajun spice
1 tsp Hot Chilli Powder
1 tsp Piri Piri Seasoning

Pre-heat the oven to 180. The chicken will take about 320 minutes to cook so bear this in mind with what ever your having with it :)

1) Prep the mini fillets, removing any fat etc from them
2) Beat the egg well in a bowl
3) Add the Smash and all the spices etc to another bowl and mix well with a fork
4) Add some foil to a baking tray and spray well with Frylight
5) Dip each breast one at a time into the egg, then drop into the smash and spice mix, covering as well as you can all over. Then lay each fillet onto the tray. Repeat until all are done.
6) Now spray the chicken fillets again with Frylight and re-top all fillets again with the remaining mixture. Spray with frylight again.
7) Place the tray in the oven for 10 minutes.
8) Remove after 10 minutes turnover. Spray again and sprinkle mixture over that side too and spray frylight again.
9) Replace tray in the oven and cook for another 10 minutes.

Serve with Homemade Coleslaw, SW Chips, Salad and a side of beans!

This sounds delicious... What do you syn this as? I ask because my consultant posted a post about 'tweaks' and using smash any way that it was not intended was one therefore should be sinned...

Have you found that using smash in this way affects your losses? Sounds delicious and I want to try lol :)
 
I don't got to class. I do it myself online. I have no idea how you would syn it tbh as I don't go for all that 'tweaking' malarky. Though having just run the Smash info through the online calculator it came up at 1 syn for 100g. I can't answer your question about if this recipe affects my loss as it's the first time we have had it. But I did make Smash Scones to accompany one meal last week which again I have heard people say are 'tweaks' and I still lost 2lb last week.
