the wraps would be my tweak - they are Discovery brand wholemeal ones - they syn out at 5.5 each...but I use one as a HEB occasionally even though they aren't officially.

I don't live in the UK, so at my last visit I bought a couple of packs, and stashed them in the freezer.

I burnt my mouth - too greedy to wait!!

yes it was lovely and fixed a craving for something oozy and salty too... I wrote it up as a snack, but it was more like an extended lunch...

BEEF STEW WITH STAR ANISE AND BASIL
THIT BO KHO

Ghillie Besan

SERVES FOUR TO SIX

INGREDIENTS
500g lean beef, cut into bitesize cubes
1 tbsp ground turmeric
2 tbsp sesame or vegetable oil
3 shallots, chopped
3 garlic cloves, chopped
2 red chillies, seeded and chopped
2 lemon grass stalks, cut into several pieces and bruised
1 tbsp curry powder
4 star anise, roasted and ground to a powder
1 ¼ pints hot beef or chicken stock, or boiling water
3 tbsp nuoc nam (fish sauce)
2 tbsp soy sauce
1 tbsp raw cane sugar
1 bunch fresh basil, stalks removed
salt and ground black pepper
1 onion, halved and finely sliced, and chopped fresh coriander (cilantro) leaves, to garnish

steamed fragrant or sticky rice, or chunks of baguette, to serve

  • toss the beef in the ground turmeric and set aside. Heat a wok or heavy pan and add the oil. Stir in the shallots, garlic, chillies and lemon grass, and cook until they become fragrant.

  • Add the curry powder, all but 2 tsp of the roasted star anise, and the beef. Brown the beef, then pour in the stock or water, nuoc nam, soy sauce and sugar. Stir and bring to the boil. Reduce the heat and cook gently for about 40 minutes, or until the meat is tender and the liquid has reduced.

  • Season to taste with salt and pepper, stir in the reserved roasted star anise, and add the basil. Transfer the stew to a serving dish and garnish with the sliced onion and coriander leaves.

  • Serve with steamed fragrant or sticky rice, or chunks of baguette.

Its delicious - when I made it I reduced the oil (of course) and only used 3 star anise - which was enough, I think next time I would only add 2 tbsp fish sauce as the gravy came out a bit salty. Serve with rice and broccoli or green beans

peeking at the scales today looks like I'm heading for a sts or even a micro gain (depending on how big my poo is!!). So - need to get back in the zone!

I'm going back to aiming for weekly exercise total of 7 hours (not as manic as it sounds, since otherwise my day is very sedentary)
and weekly syns 100 (14 a day)
Also aiming for 5 to 7-a-day – I usually keep an eye on speedfoods – and have a good variety, but am going to focus on portions too, i.e. usually if I eat 2 apples in a day I only count 1 speedfood, equally a couple of spring onions could count as speedfood but not a veg portion iyswim.

the weekday brekkie omelette was not a good idea – it was still repeating on me 2 hours after eating. Couldn’t find any in-date 0% yoghurts in the shops lately – grrr! Er yes I have seen my daily syns today.
I was saving my HEB for some ryvitas as supper, but will give them a miss due to the French bread – I believe I have had sufficient fibre today with fruit, veg and lentils! Oh and I did STS:cool:

(I grated 56g mature dutch cheese and 56g wensleydale for OH and me and mixed in with small grated onion, 1 beaten egg and lots of freshly ground pepper – the egg made it easier to portion out and spread, and also puffed up a bit under the grill)

mmm I have been fancying this for ages, and it was as good if not better than I’d hoped for :D

Moroccan spiced lamb shanks with tomatoes and spinach (chickpeas 113g= HEB) oil – (1.5)

  • 2 lamb shanks
  • 1 red onion, thinly sliced
  • 2 garlic cloves, crushed
  • 1 tablespoon ras al hanout spice mix
  • passata
  • 4 tomatoes
  • lamb stock
  • 400g can chickpeas, drained, rinsed
  • 80g baby spinach leaves, trimmed
I browned the meat and put to one side, cooked the onions and garlic off in oil, added spices, added tomatoes passata and stock, put meat back in the pot and cooked 3 hrs medium oven. Left overnight, so the flavours would meld, and to remove congealed fat. Warmed up and reduced sauce for a while, adding chickpeas and spinach for last 5 mins.

Roasted tomato soup

Cauli mac and cheese (1 HEA, ½ HEB)
Cook the pasta until just about al dente. Instead of making a cheese sauce, cook a cauliflower until soft, then blitz– add the cheese to this, some mustard powder and a little milk (2) to make the right consistency. Bake in the oven topped with sliced tomatoes breadcrumbs / cheese.

Cauli mac and cheese is a work in progress – tonights version came out a bit dry and not cheesy enough – next time would be better with some stronger cheese like parmesan. The pureed cauli as sauce base though is a keeper.

Hope that our social life calms down – eating out, and entertaining is part and parcel of diplomatic life – but I do try to minimise damage – despite what I may end up eating and drinking, its much less than I might have done otherwise, and I’ve been honest!

Exercise has also been less than intended due to fighting off whichever lurgy my body was busy with.
