Healthy extras question

I've seen some people post their food diaries and noticed some people have put 2Hea and 1heb? How is that possible I thought it was one of each. Or is it that if you don't have the full allowance of say milk you can have small amount of cheese? I'm having 200ml of skimmed milk today so if that's the case up much low low cheese could I have?
 
It might be that the others were doing a Green or Original day rather than EE. Green and Original allows you to HEBs and one or two HEAs.

I ocassionally split my HEs, but usually only half/half. For example I'll have 125ml semi skimmed milk (the allowance is 250ml) and then 20g reduced fat cheddar (the allowance is 40g). It gets a bit complicated if you're not doing exact halves and that's where you might be likely to accidentally end up going over.
