Healthy meals

Is there a thread for us to post healthy home made meals? if not, shall we all add some of our favourites here?
If so, one of my favourites to go with meat or quorn of some description...
Spicy stuffed peppers
4 red/orange/yellow peppers
2 tubs of salsa
Mushrooms
garlic - how much you like
sweetcorn

Cut peppers in half length ways and de-seed.
Chop mushroom into small pieces.
Mix everything in a bowl and fill the peppers with it.
Pop in oven on about 150 degrees (fan oven) for around 40 mins or until peppers soft.
Put with some meat or a nice peppered quorn steak
Low cal, low fat, happy days!
