Hearty lentil soup

I discovered how easy, cheap, and amazing lentil soup is.

Ingredients:

1 cup of red lentils
1 onion
1 carrot
Garlic
Basil
Cumin
2 cubes of chicken stock
4 cups of water

Bring water to a boil, cook lentils for 10 minutes and reduce and cook for another 20. Chop onion and carrot and cook them in a pan, then mix in with the soup, as well as all of the other spices to your liking.

Makes three portions of 320 calories, is really delicious and so filling!

Not tried lentil soup before but will def give this one ago :) could you liquidise it or best left with more texture?

Mine came out with a nice smoothish texture from just cooking it, but it still had bits. You could definitely put it in the blender, or add more water/broth to it. It's not a liquidy soup tho so I'm not sure what it'd be like. It's usually quite thick.
