HELP! Project Mexico

So I started SF today....I have never done it before and have around 8 stone to lose.
Thing is I am cooking a mexican feast for my friends on Friday - hence Project Mexico.
Everything will be low fat and not many carbs will be present but I will be using wraps and tacos and making home made tortilla chips (they are to die for)
The menu will be:
Extra Lean Mince Home Made Chilli
Home Made Chicken Fajitas
Tacos (bought)
Home made tortilla chips -made with Olive oil
Soft Tortillas
I don't use sour cream or guacamole - just 0% fat free greek yogurt (which is scrummy)
Should I cut out one of my snacks and have the home made tortillas as one of them?
Thanks in advance....I am very nervous about it (I will however be playing squash on Thursday night)
