How do I 'fatten' up meals?

Odd question I know, but I read that toddlers shouldn't be given the low fat high fibre foods that we eat because there are not enough nutrients in them for the quantities they eat. So bearing this in mind and the fact that I am not going to be making or buying two different meals each day how can I fatten up my meals for my little boy?

I know I can add cheese to his spaghetti Bol, or butter to his veg but surely what I'm eating is healthy enough for him too? Totally confused!

Anyone have any ideas?
