icecream for 4

15mins to prepare plus freezing time,

1 egg white
3 chunks stem ginger,,,,,,we used fresh instead,no sugar syn free ,if you use stem 1 and half syns per portion

2 lemons
6-8 tbsp sweetner or use a few drops of the liquid

2 x 200g pots vanilla mullerlight yogurt


beat egg white,finely chop ginger,juice the lemons.

mix egg white,lemon juice,sweetner and yogurt in large bowl until well mixed then fold in 2 level teaspoon chopped ginger.hold back a little for garnish.


check if sweet enough and add more if reqd

put in tub and freeze for 1 to 2 hours

take out put in blender or use a whizzer stick until smooth put back in freezer fro 4 to 5 hours.

when ready to eat remove from freezer 15mins before and sprinkle with the ginger bits or lemon rind.

have a shower put on your bestest comfy pjs and sit in front of the fire and enjoy

you could make double as long as its syn free then dip in when you feel like it

it truly is great but the best bit is it is so easy to make and not expensive,so often you see recipes in the magazine and they are so complicated and you cant be bothered. give it a go and let me know
