Red Day Italian chicken and tomato soup

    Made this soup last week and it was lovely, a refreshing change from veg or lentil soups which is what I normally do!

    Is free on original or 5 syns on green.

    Ingredients:
    1 onion, finely chopped
    1 clove crushed garlic
    2 carrots, grated
    2 rashers lean rindless bacon, chopped
    2 chicken breasts
    1 can chopped tomatoes
    400ml stock made with Chicken Bovril
    1 tbsp chopped rosemary or other herbs (I didn't have fresh rosemary so used ~1 tsp dried thyme and ~1tsp dried mix herbs)
    Splash of lemon juice
    Salt and pepper
    Parsley to serve

    1) Fry up the onion, garlic, carrot and bacon with some fry light in the large non-stick saucepan for 2-3 mins

    2) Cut/tear the chicken into thin strips and add to the pan with the chopped tomatoes, stock, herbs and lemon juice. Bring to the boil and cover and simmer for ~15 mins. Season to taste

    3) Ladle into bowls and spinkle with chopped parsley to serve.
