JAMBALAYA (syn free)

Kwise1

 THE WISE ONE 
SYN free on an EE day, for a green day replace meat with quorn or count as a HEB. Pork can be replaced by chicken.

INGREDIENTS
frylight
1 large onion, chopped
1 Red Pepper, deseeded & diced
1 Leek , sliced
1 Garlic Clove, crushed
3 Tomatoes, diced
1 Carrot, peeled & diced
A few mushrooms, thickly sliced
15 French Beans, top & tailed and cut into small lengths
1 packet fresh pork pieces (or other meat)
1 packet Schwartz Cajun Spice or 1 Tblsp Cajun Spice (tescos is lovely)
1 pinch dried chilli flakes
1 Bayleaf
1 pint stock with 1 cube pork stock or other stock cube
7oz Basmati Rice

METHOD
Fry onions and pork in frylight in a large saucepan until the pork is sealed
Add the pepper, leek, garlic, tomatoes, carrot, mushrooms, green beans, Cajun spice, chilli flakes, bayleaf & stock

Bring to the boil & cook for 15 minutes

Add the rice and cover with a lid tightly

Cook gently for 15 minutes or until the water is absorbed

Remove from the heat & allow to stand for 5 minutes before serving

Delicious ;)

I used to make this all the time before I was slimming seeing this has just given me my tea for tomoz I use chicken prawn and chiritzo but guess I'll leave the sausage out this time

You can use chorizo- just syn it ;)

Well 28g is 2.5 syns on red or EE day. So a little would be fine but not 250g lol

It makes about 5 portions so wouldn't be that bad really ( and hubby normally pinches most of the sausage anyway)

Hi Lisa

No the taste is very very different as are the textures. Jambalaya is spicy and generally uses a long grain rice (I use basmati) and is full of vegetables with a little meat or prawns etc whereas Paella uses a Paella rice which is very different in texture and has a nice saffron taste and is generally not spicy and generally uses fewer vegetables and more seafood.

Both , however , are equally yummy ;)
