Makes 4 portions maybe more if you are not greedy...

Time to make: 3-4 hours cooking time but worth every mouthful

Ingredients:

2 x packs of skinless/boneless chicken thighs (10-12peices)

1 x large onion

8 x teaspoons of Raja or East End mild madras curry powder

Duns river jamaican jerk seasoning (free) and amazing....

Crushed garlic (lazy garlic) to your taste

Thyme
Salt
Pepper

Soy sauce

chicken bovril

Lemon juice

Tomato purée, 1 syn per squirt, but negligible for portions.

1 x tin tomatoes

1 red pepper

Sweet potatoes

Rice

Method:

Step 1

Trim any visible fat of the chicken and put in a saucepan, add 5 teaspoons of curry powder, garlic, thyme, salt and pepper, nice splash of soy sauce and 1/2 teaspoon of Jamaican jerk seasoning and large onion diced (not to small diced).

Now you can marinade this for 2 hours or overnight is best, or you can go straight to step 2.

Step 2

Cook in pan with a some frylight for About 30-40 mins until chicken is nicely cooked through.

Whilst this is cooking, make up 2 pints of stock, with bovril (about 4 spoonfuls), lemon juice a 2"squirt of tomato puree, 3 teaspoons of madras curry powder and 1 teaspoon of Jamaican jerk seasoning, you can tone it down a bit if you wish.

Add this to the chicken, simmer for 1 hour stirring occasionally. Wait until it has a thick gravy like look.

Step 3

Add tin of chopped tomatoes, and diced red pepper, simmer and cook for another 40-50 mins until juices are reduced an chicken falls apart.

Serve with rice and sweet potatoes wedges cooked in oven for 45 mins until soft and a little crispy.

Thank you so much for posting this, i make a marinated jerk chicken (no sauce) but this looks so much nicer. You are so right about the Duns river jamaican jerk seaoning it is amazing.

Most supermarkets have it, in the ethnic section, tescos definitely have it in the jamacian section.

Cannot see why not as long as it's free or you will have to syn it, the dunns river o e is a kind looseish paste anyway...
