Mushroom Curry

Ingredients
low-fat cooking spray
2 medium onions sliced
300g (10.5oz)mixed mushrooms, sliced or chopped
2 garlic cloves crushed
2teaspoons med strength curry powder
1/2 tea spoon cumin seeds
3 tablespoons tomato pur'ee
4 tablespoons low-fat bio yogurt
salt and freshly ground black pepper
1/2 teaspoon ground fengreek(optional)
Instructions
heat a non-stick pan and spray with the low-fat cooking spray.
stir-fry the onions for about 8 minutes until soft and brown.
add the rest of the ingredients to the pan and heat gently until simmering , then cover the pan with a tight-fitting lid and cook for 10 minutes.
remove the lid and continue cooking for about 2-3 minutes until the sauce has reduced and thickened slightly .
season to taste and serve.
Special Notes
add cooked meat, if you want to , dont for get to add the points if you do so .

Spray oil
2 Onions sliced
300g Mixed Mushrooms, sliced or halved
2 Crushedd garlic cloves
2/3 tsp Medium curry powder
1/2 tsp cumin seeds
3 tbl sp Tomato puree
4 tablespoons very low fat yoghurt
Salt and Pepper
Instructions
Stir fry onions in spray oil until soft & brown.
Reduce heat, add rest of ingredients to the pan and heat gently until mushrooms start to release juices. Cover pan and simmer for 10 mins, stirring regulary.
Remove lid for last few minutes, season and serve.
Special Notes
Spinach and/or prawns are very nice added to this curry, remember to add pts for prawns. You can also add some chopped tin tomatoes too
ps has anyone tried the new ww frozon soups range. I bought a chicken one and a pea and ham one. Just had the pea and ham and it was lovely and only 2.5pts for a big bowl
