A yummy Pesto infused sauce gives this pasta dish a rich edge while saving on the Propoints.


1 medium Pepper, Yellow
1 portion(s) Butternut Squash (large)
1 medium Onion, All Types
3 Tomatoes, Whole
1/2 jar(s) Passata (large)
1 teaspoons Mixed Herbs, Dried (as purchased)
75 g Tesco Classic Red Pesto (Jar)
2 teaspoons Oil, Vegetable, Any Type
4 portion(s) Pasta, White, Dried (large)
1 teaspoons Sugar, White Instructions

1. Preheat oven to 200'C, Put the pasta on to boil and chop up BNS. peppers,onions and tomatoes in to bitsize chunks.
drizzle over oil and toss with garlic, salt, pepper and the mixed herbs.
2. Put veggies in the oven for 20 mins tossing half way through cooking.
3. Add the pesto to the passata and stir well with salt and pepper and the sugar.
4. Once pasta is cooked drain and put back into the pan, add the veggie and sauce and cook until piping hot.

Serve with a big mixed salad if you like, even some cheese sprinkled on top or even some slices of Garlic bread (add PP for the cheese or garlic bread)! Great as a lunch or dinner even add chicken, quorn or pork for super filling meal!!
