Lamb pilaf is my new favourite!
350g lean lamb steaks diced
225g basmati rice
1 stick celery diced
1onion diced
1 carrot diced
2 chillies de seeded and finely sliced
2-3 cloves garlic
Pinch saffron
1 tsp cinnamon
2 tsp cumin
450mls veg stock
Brown lamb and remove with slotted spoon Soften onion, celery, carrot, chillies and garlic Add the cinnamon and cumin at end of softening Return lamb and add saffron, rice and stock Bring to boil, put lid on, put temp on low and leave for 12-15 mins till all liquid absorbed. Do not stir!! Turn off heat but leave lid on for further 10 mins to steam BEAUTIFUL!
