Lemon Chilli Chicken

I made this last night and it was AWESOME, will def be a regular in my house!

Lemon Chilli Chicken
Serves 2
Extra Easy – syn free per serving
Original – syn free per serving
Ingredients
4 small chicken breast fillets
1 teaspoons of garlic powder
½ teaspoon of freshly grated ginger
½ medium onion, finely chopped
1 cloves of garlic, crushed and chopped
110ml of chicken stock
½ teaspoon of ground coriander
½ teaspoon of cumin
¼ teaspoon of chilli powder
1/2 teaspoon of turmeric
the juice of half a lemon
1 tablespoons of white wine vinegar
Frylight or Pam spray
Some fresh coriander or cilantro leaves (or dried if you haven’t got fresh)
few slices of fresh lemon to garnish

Method

Spray a frying pan with Frylight or Pam spray
Brown the chicken, and set aside
Add the onions and fresh garlic and ginger and cook for approx 2 mins, add some more Frylight or Pam spray if needed.
Add the spices and stir fry for a further 1 minute.
Stir in the lemon juice, stock and vinegar.
Add back the chicken pieces, bring to the boil, reduce the heat and cook for approx 20mins until the chicken is tender.
If the sauce dries out too quickly add a little more water.
Top with some coriander and fresh lemon slices
Serve with your choice of side and vegetables

Thanks. I enjoy doing my blog and take pride in my pictures, especially now hubby has helped me take better ones. Some of my very first pics were awful, but then the camera we had at the time wasn't very good either.

I hope you enjoy the sauce recipe. I make it often with slight variations and it is so handy to freeze and take out when needed.

I like to add a couple of handfuls of red lentils to thicken the sauce and make it like a dhansak and I add a little bit of Splenda for that sweet/sour taste. It's also lovely with a tbsp of lime pickle (1.5 syns)!

Yay stacey good to see you back, although you perhaps have been posting and i have missed them.

Hows Canada treating you?
