Lemon Puffs

Preheat oven to 160C

2 egg whites
grated rind of 1 lemon
1-2 dstspn Splenda (adjust to taste)

Mix the sweetener and the lemon rind. Whisk the egg whites until stiff, then beat in the sweetener and lemon mix. Place spoonfuls either on a silicone baking sheet/tray or on parchment paper on a baking tray. Bake in oven for 15 mins. Allow to cool in oven and remove from parchment paper when puffs are cold. I got 12 little puffs.
 
Yummy, I would have scoffed the lot but foolishly offered them to the kids and they were wolfed down!
