Low Fat Chili Recipe

This makes 5 x 250g portions

500g extra lean mince beef
1 medium onion
1 tin kidney beans (rinsed & drained)
1 tin chopped tomatoes
1 beef oxo (add 300ml boiling water to make stock)
1 1/2 tsp powdered cumin
1 1/2 tsp chili flakes
1/4 tsp chili powder
1/2 tsp low sodium salt
1 tsp paprika
2 tablespoons tomato puree (from the tube)

Method
Brown mince and onion in olive oil, add spices and liquids, cook for 15 to 20 minutes then add kidney beans last.


1 portion = 257 cals
1 tablespoon eat smart sour cream = 19 cals
25g low fat grated cheese = 67 cals

I serve with cauliflower rice (half a small head) 33 calories

Method
Use a kitchen machine to grate fresh cauliflower (it really does look like rice consistency and takes seconds to do) place in a bowl, cover - don't add water - cook on high in microwave for 3 minutes and it's done.

Total meal = 376 cals including toppings and cauli rice.

I'm really watching portion control for the first time and it's going great. This chili freezes really well. You can defrost a portion in about 6 minutes in the microwave whilst you make the rice. It's a really great and filling meal in about 10 minutes.

I will deffo have to try that - it's interesting about the cauli rice though, I've never seen or done that before..I'd love to have a go but I'm anxious about getting it wrong!
 
Shame I can't stand cauliflower!
