Lydia's points diary and food log

Its a new week and the first day of the rest of my diet, at least thats the way i am thinking about it, feeling very positive and very motivated, so thats got to be good, going to give it 100% this week and if that doesn't work I'll be having a stern work with my doctor when I go back soon to have my thyroid levels checked again.
 
Doing Kickstart for the week

Food for today:

B - 2 slices 50/50 crustaway bread (1 point)

150g new potatoes (1.5 points)

I will let you know if anything changes, hopefully not, theres certainly enough food there to ensure I am not hungry today.
 
Had this soup (but with BNS) for my dinner it was lovely, can highly recommend it.
 
Pumpkin, Ginger and Apple Soup

This soup is perfect for autumn, so enjoy and get into the spirit of the season!



Ingredients

· 10 spray low-fat cooking spray
· 1 medium onion(s), chopped
· 1 medium apple(s), chopped
· 1 small carrot(s), chopped
· 2 teaspoon grated ginger root, fresh
· 450 g pumpkin, deseeded and chopped
· 2 portion stock cube, made up with 850ml of hot water
· 1/4 teaspoon spice, either allspice or nutmeg
· 1 pinch salt, and freshly ground black pepper
· 1 teaspoon parsley, chopped, to garnish
Instructions

· Heat the cooking spray in a large saucepan and sauté the onion, apple and carrot for 3 - 4 minutes, until softened. Add the ginger and stir well.
· Add the pumpkin and stock to the saucepan. (If you are wheat or yeast intolerant, click here for a fresh stock recipe). Bring to the boil, then simmer gently without a lid for 20 minutes, until the vegetables are tender.
· Transfer the soup to a blender or food processor and blend for 15 seconds, or until smooth. Return to the saucepan, reheat and season to taste with allspice or nutmeg, salt and pepper. Serve, sprinkled with chopped fresh herbs.
Notes

· If you cannot find pumpkin, try using butternut squash instead.

Morning everyone

I'm doing fine thanks, hope everyone is ok, despite the yukky weather! Yesterday went according to plan, I stuck to the plan 100% so very pleased with that. I'm off to the cinema tonight but my friend is under strict instruction that I am allowed no popcorn only a diet pepsi!

Good idea Saraian - at lunch time I went to Sainsburys and bought their BGTY toffee popcorn - 1 point a bag!!!! Will take a bag with me tonight to watch x-files!
 
Actually thery are 1.5 points a bag - but totally gorgeous! Well stuck to plan 100% yesteday, but I did drop my mid afternoon snack of a banana (as had my dinner quite late so wasn't hungry) and had the popcorn at the cinema instead, so still stuck to my 18 points.

I thought those ones were 1 .. in this months mag they are 1 and the snackajacks are 1.5 so i thought sainsburys were absolute saints for making them cheaper on points! .........

im going on what the mag says ;) lol means i get more points lololol .....
 
I know, when I originally said 1 point, thats because of what the Mag said, but when I put the NV into my points calculator it came out as 1.5!
