Meal idea thread for newbies

Hi,

We did this a while ago when I was new & it was quite helpful for me to get some meal ideas so I thoughtI would start a new thread on what you are eating this week to try & help the newbies and people like me who are starting again.

I only do Green or EE so here's my dinner plan this week:

Smoked River Cobbler with Sweet Potato mash & veggies

Teriyaki Salmon stir fry with Egg Noodles (from this months SW mag)

Mushroom risotto with Quorn Fillets

Quorn sausage, Mash, mushy peas & Gravy

SW Quiche with Potato wedges

Free Curry (see my recipe thread) and rice

Quorn Sausage and Bean Bake.

Anyone else care to join in? :)
 
Well, I made up some of my chicken, butternut squash and leek stew last night in the slow cooker. I have just reheated it with some barley for a rather late lunch or early dinner (not sure which - got up very late today so the whole day is upside down).

And the other half I will have tomorrow, probably with some rice.

Later tonight I will be having some salad and fruit and jelly with yogurt.

I haven't planned too far ahead, but I have a dozen free-range eggs so I will hard-boil some of them and use some of the others for a frittata, with mushrooms and courgettes.

I am intending to make a sweetcorn chowder SW recipe next week, and also a leek and cannellini bean recipe which I found in the Waitrose Christmas booklet (minus all the oil, of course).

I also want to try Britmum's beef in the slow cooker recipe too.

This is a great idea! Here's what I'm having for the week (subject to change depending on my mood on the day :D )

Sunday
Steak & chips with salad (the steaks are marinating in the fridge as I type!)

Monday
Chinese grilled seabass/seabream with stirfried peppers, spring onions and broccoli

Tuesday
Grilled chicken with roasted vegetables (butternut squash, peppers, fennel, courgettes etc)

Wednesday
Cioppino (Italian fish soup with prawns, crab, mussels, clams, fish, tomatoes, white wine yum!)

Thursday WI day
Kebab! Beef patties (syn free, bought from Joe's sausages) in pitta bread, mixed roast veg on spinach salad, yogurt dressing and homemade chilli sauce

Friday
Bean and sausage cassoulet

Saturday
Pan fried chinese salmon on vegetable noodles

Thanks for this thread, I've never been one to plan a whole week, but seeing as its the first week back to work I thought it might help to get a bit organised ! I'm trying to plan my lunches too:

Sunday
Bean chilli and rice

Monday
Dinner- Pasta quiche and salad
Tea- Quorn chilli and wholemeal spaghetti

Tuesday
Dinner- Spicy carrot soup with multigrain ryvita or pagan Krisprolls
Tea- Beans on Toast

Wednesday
Dinner- Quorn chilli and salad
Tea- SW chips, poached egg and beans

Thursday
Dinner- Pasta, sweetcorn, tuna and salad
Tea- Piece of fish (not sure which one yet), Jacket potato, peas and mashed carrot and swede

Friday
Dinner- Pasta and pesto, plus a salad
Tea- Stuffed peppers (stuffed with couscous, onions and tomatoes)

Saturday
Dinner- Poached egg or Beans on Toast
Tea- Curry (homemade) with rice

Sunday
Homity pie (SW magazine recipe)

All my days are green except Thursday which will be extra easy. Cool, it looks like a plan ! :)

I'm another coming to you for meals this week. They sound fantastic. You must be a great cook.
 
Awww thank ya! I love cooking and photographing food lol. I *really* need a top notch camera (batts eyes at DH)

Shakshouka

red peppers
mushrooms
onion
tomatoes
tinned toms
passata
paprika
2 eggs per person


fry the peppers mushrooms onions and tomatos in a frying pan with fry light

add half a tin of tomatoes and half the passata and let it simmer.

make dips in the sauce and crack an egg into each one.

spoon over the eggs some of the juices on the top so the top of the eggs cooks as well

then serve it on its own or with rice pasta or toast!

now when i told my OH thought it sounded gross and he is a fussy eater! the eggs look a strange colour as the sauce you sppon over them makes them eggs look pinky red but tastes amazing!

honestly try it!!!
 
You all sound like gormet cooks! Puts mine to shame :(
Mon-quorn fillets, mashed potato & mixed veg
Tues-beef casserole with mash & extra veg
Wed-either Mum & Dads (meat & 2 veg) as OH away or chicken breast & stir-fry
Thursday-chicken breast & stirfry or frozen veg
Friday-quorn 'cottage' pie with carrot & swede topping & veg

Did everyone stick to the plans for last week...... we were a bit disrupted with the snow so things were a bit different. I'm going to make a plan later for this weeks dinners/tea's but meanwhile does anyone have their plans that they want to share ??
 
For this week, these are the things I have ready for eating:

Dinner:
Roasted veg soup
Quorn and bean chilli
Pasta and veggies with pesto
Homemade tomato soup

Tea:
Fish (Swordfish or Salmon) baked in foil with Jacket and salad
Wholewheat spaghetti and Quorn and Bean chilli
Poached egg on toast
SW chips, beans and egg
Stuffed peppers and salad
 
Mmm I'm hungry just reading everyones meal plans :)

This week I've planned:

today's lunch - chicken pasta salad then some pineapple & low syn crisps
tonight's dinner - cannelloni :D love that dish

Not sure about lunches for the rest of week but dinners are:
Homemade chilli
Risotto
Baked potatoes
Chicken stuffed with mozzarella wrapped in bacon, probably served with veg or corn on the cob
Sweet & Sour chicken, recipe from SW mag
Macaroni cheese, I got the recipe from the recipes thread somewhere it looks lovely :)

Usually do easy to cook stuff during the week and save the more complicated dishes for the weekend!

It is "skint" week this week (the week before we get paid) so I just went through the cupboards and did my meal plan on what we actually had in the cupboards/fridge/freezer.
 
Hey Sara - thanks for bumping.... your skint week looks lovely :) My week is using plenty of freezer stuff, hopefully, that is if I stick to the plan. This plan looks pretty similar to other weeks but in actual fact I've not stuck to my plans in the last few weeks!

Breakfasts:
Oats with yog and skimmed milk
Mango pieces with mango yog mixed with quark
weetabix
Mixed fruit and yog

Dinners:
Peppers/onions that we had with fahitas today... having with cottage cheese and wholemeal bread.
Roasted veg soup, krisprolls and cottage cheese/laughing cow light
Quorn chilli
Tuna and pasta with sweetcorn and salad

Teas:
Fish, Jacket and roasted veg
SW Chips, beans, egg
Broccoli, peas and leeks with pasta and HA cheese
Homity Pie
