I think i just found my new favourite recipe. Mini Quiches. Ran out of quark so had to improvise (my idea of a nightmare)

Ham slices, eggs, cottage cheese, bacon, peppers, salt and pepper (I also added 42g low fat cheddar (hea) but thats optional, just makes it more cheesy). And herbs to "decorate"

makes 4-6 (depending on amount of filling you put in/size of eggs)
Line a muffin tin with ham slices
Mix, 3 eggs, a few good dollops of cottage cheese, salt pepper, cooked bacon (chopped), peppers (chopped) and the optional cheese.
Spoon mixture into the ham linings. Sprinkle herbs on top.
Sit muffin tray in baking tray with water in it, and put in oven cook on gas mark 4-5 for about half an hour.

They are delicious. Eating 4 right this moment for lunch, and they will be free on red and extra easy (plus an hea if you use the cheese). Might experiment with the fillings next week.
