Minky's meals!

Breakfast
Alpen light cherry bakewell 1/2 HexB.... And that was it! Thought I ate a banana too but didn't :(

Lunch
Bulgar wheat with roasted veg and spices
Rocket, watercress and spinach
Sweet chilli chicken (must check syns online but don't think it's horrific) - just checked and it's half syn for the WHOLE pack! Had quarter but will class it as 1/2 syn
Slice of half syn roulade made with raspberries
Will say 1/2 syn for a slice just to ensure I count some form of syn. Was only a slice about an inch wide

Cherry bakewell alpen light 1/2 HexB
8 mikado 4 syns

Dinner
Cheese (HexA) and onion on 2 x WM toast 6 syns with baked beans. So yummy!!

HexA x 1, HexB x 1
Syns 11

Exercise 8.7 miles on the bike
Fluids 2 x fruit tea, 4 bottles water, 1 x nas summer fruits, and probably couple of diet pepsi' and 2 waters before beddy byes

It was lovely! My friend was rushed into hospital last weekend with appendicitis and she needed cheering up so I went over and made her lunch and the roulade - which she also loved! Left it with her so I wouldn't eat it all :)

How did WI go?? Xxx

Chicken curry with pepper onion and chopped tomatoes.
Side of garlic and chilli spring greens - which was bloody gorgeous!

Naan bread 8 syns
2 x Daim mikado 1 syn

Fluids 4 water, 2 x fruit tea, 2 sugar free cream soda

Thanks minks - I lost another pound and achieved my Club 10....... So chuffed and feeling motivated. You are doing really well - how was the cannelloni?

As for the cannelloni it's waiting until tonight because I didn't have the right dish :( going to get one on my way home tonight so it's definitely getting cooked tonight! Xx
 
Let me know what it's like - have never made cannelloni. I'm having tuna pasta for lunch and lamb, potatoes, cauliflower and peas tonight (lamb remains from yesterday's roast!)

Tesco light choices spicy beef pasta 3.5 syns
2 x tesco salt and vinegar rice cakes 3 syns

Dinner
2 x quorn cumberland sausages 2 syns
1/2 Linda McCartney sausage 1 syn. Bleugh! 'twas positively MINGING! tasted like guinea pig food mixed with twigs. Disgusting. What a waste of a syn.
HM chips
Beans

Pink lady segments with 30g cheddar HexA
2 squares thorntons almond marzipan bar. 2 syns. 10 for the whole bar but chopped into pieces and a syn each for a tiny square. It's really rich and in the fridge so is just enough :)

HexA x 2, HexB x 2
Syns 12.5
Fluid 1 x peppermint tea, 2 large water, 1 sugar free cream soda, 100 ml semi skimmed milk from HexA

Brain is so fried I haven't got the energy to make the cannelloni so its on for dinner tomorrow :) enjoy your lamb! We have veggie sausages instead ;) xx
 
Just enjoyed and am sooo stuffed.......my eldest has moved into his first flat and youngest is skiing with school....still seem to be cooking same amount - oops!

Where has the youngest gone skiing? I love to ski, been to Austria and the alps in France and hopefully when I'm a skinny mini again I can return to doing it, OH wants to try it as he has never done it. And defo cannelloni tonight so will report back - I promise!! Xx
 
He's in Austria and having a whale of a time.......think the resort is called "Zel Am Zee" or something like it lol

Cannelloni gets a 7.5 outta 10. So much faffing with it :S was lovely don't get me wrong but I used plain passata and it should have been the one with onions and garlic so maybe that would have taken it to an 8 or more :) xxx
 
The cannelloni looks lovely but agree with you - don't really like making faffy foods unless have loads of free time (which isn't often!)

I would recommend making it into a lasagne though! I would blitz most of ingredients in a chopper, mix with wet goods and then layer with the lasagne sheets. Turns out just as well but less hassle.

No idea what's for tea tonight, OH is cooking so I can go to badminton. Fingers crossed it's not a nightmare! Xx

Scan bran cake 3 syns topped with fat free fromage frais sweetened and had a drop of vanilla essence in

Exercise 3.7 mile walk, 1 hr badminton
Fluids 1 fruit tea, 5 large glasses water, 2 x 500ml bottle water.
