Cheers fellow Celtic Warrior!! Had a grand weekend and avoided giving in to temptation....phew!
(Except for a wee smidgeon of Caeser dressing on my big plate of yummy salad! Hopefully
that'll be forgiven by the scale-monster which I face tomorrow!!)

It went grand hunni thanks! There was a massive cheesecake present at my cuz's but I didn't give it the
time of day! According to everyone I was avoiding another eczema outbreak so there were no Mrs. Doyle
style "Ah go on, go on, go on, go on"s from anybody! Glad you had a successful "date" with the personal trainer babe.
He sounds like he's got big respect for you already. And we all know you can achieve anything you set your mind to,
so bring on those dumbells! xxx
 
Soooo week 3 is nearly at a close, can't quite believe that!
Third weigh-in tomorrow morning bright and early. *Excited squeal*
Another 3lbs would be just amazing but I'll be happy with anything as it's all
adding up. As Lea says, it's a marathon not a sprint so once I'm slim and maintaining well
come Christmas (ahhh the "C" word sorrrrrrry way too soon!) I'll be a very very happy bunny!

Everyone glued to the Olympics these days?!!

Hope our Katie gets gold in the boxing, she really deserves it! What a girl!
And John-joe Nevin has at least a bronze in the bag so you never know...

Congrats to team GB doing so well in the medals!

Had to take in my uniform top half an inch at the weekend and it's still quite loose-fitting, woohoo!

Well it's great news for the Shivster this morning! Hoorayyyy! Another 5lbs off!! I'm ecstatic with that!

So if I'm to be 10st 7lbs for hols that's an average of 2.3lbs per week I must lose in the next three weeks.

And that, my dears, is totally do-able methinks, so BRING IT ON!!! :D

We should start a recipes thread to help any newbies. I have a tasty tuna bake one made with the
macaroni pack actually.

Here goes:

Ingredients

1 small can tuna (in brine) drained
Quarter of an onion
Quarter of a pepper
2-3 mushrooms
Pinch of dill (optional)
Pinch of tarragon (optional)
Pinch of black pepper
1 pack of S&S Macaroni Cheese
Handful of mixed lettuce (to serve up on)

Method

Pre-heat oven to about 160 degrees C
Make up the mac & cheese pack with part milk & part water in a saucepan over a low heat until simmering.
Add the black pepper if desired.
Place tuna chunks in bottom of lightly greased oven-proof dish.
Sprinkle with dill and tarragon (optional).
Sprinkle the chopped onion, pepper and mushrooms over the tuna.
Pour the mac & cheese over the tuna & veg.

Place the dish in the pre-heated oven and bake for about 20 mins.

Serve on a bed of mixed lettuce.

Yum!
