Green Day Mixed bean chilli

Had a green day ,I'm sure it would pass for EE with the veg.
I sort of made this up and found a recipe in a slowcooker book, I'm sure it will be the same on hob,or oven
So you could add more o f anything ,any tins of beans.
my liquid was only 1/2 pint because slowcooker keeps condensation in,so you may need to add more on hob?

Served 4. Free green EE

2 tins mixed beans ( mine were morrisons) drained
Courgette large
2 onions
carrot large
2 sticks celery
Whole bulb garlic
Chop all veg.

1/4 pint veg stock
1/2 carton pasatta
Salt pepper
Chilli powder to your taste
( 2 tsp sweetener)

I prepared step 1 night before on hob in sauté pan and put in plastic bag in fridge to add to slowcooker in morning

Step 1

Frylite onions garlic celery on low till soft

Add veg more frylite put lid on stir frequent. Just sweat veg 10 mins or so.

Add chilli salt pepper stir ,sweat 5 mins.

Add 1/4 pint stock cube 5 mins. add sweetener.

( this is where I left to cool and put in fridge overnight ready for morning)

Step 2 morning

Turn slowcooker on low.

Add veg mix from fridge
1/4 pint boiling water
1/2 carton pasatta
Add tins of drained beans

Stir well

Cook for 7/8 hours. I turned it up to high for last hour. I tilted lid of SC ajar to let steam out,ten mins before serving,to thicken sauce.

Served with SW chips and HEXA cathedral light cheddar 42g.

Second day served in HEXB co op pitta with HEXA cheese.

This was truly so tasty and fulfilling. Next time I will add another tin of beans maybe,as teenagers were tucking into it all!

I'm guessing it would be around hour and half or less in an oven

Ummm...this looks great. Im getting into green at the mo as bored of EE every day. Was a vegetarian for about 10 years so no struggle there...but didnt think about something like this!! Cant believe you can eat it on a diet-its mental!
 
Its great isn't it. Thought i'd be a red sort of girl but green is sooooooo much easier.

Bean chili
Quorn spag bol
JAcket pot with cheesy beans
PAsta n sauce topped with cheese
Ooooh i love it!
 
I'm loving green too,thought I wouldn't lose as much,but I lost 4 LB this week??? It's cheaper too! I'm getting all my veg from the market,massive jacket pots. So cheap x
 
I'm a red sort of girl, but my hubby eats very little meat so I am doing mainly green and loosing fine
