Mushroom Biriyani (122 calories)

Serves 4
Takes about 5 minutes to prepare and 10 minutes to cook (unless you need to cook the rice)

2 garlic cloves, crushed
250g mushrooms
1 tsp ground turmeric
1 red pepper, diced up
2 tbsps dry white wine
250g cooked rice
2 tbsps frozen sweetcorn
1 small, red chilli, chopped up
Black pepper

1. Heat up a frying pan and dry fry the garlic and mushrooms until they're soft
2. Add the turmeric and red pepper, cook for a couple of minutes before you add the white wine
3. Stir in the rice, sweetcorn and chilli and cook until the sweetcorn is hot - it's the last thing to heat up!
4. Eat and enjoy!

Could easily add in chicken or other meat as wanted too.
 
you could probably just leave it out or add a little stock instead
