Mushroom Soup

Hi

I noticed the lack of a decent mushroom soup recipe on here, so here goes...

ingredients
------------

700g mushrooms (any type - but I used closed cup)
x4 medium / large onions
2 cloves of garlic
x4 medium sized potates
x4 chicken oxo cubes (or you could use vegtable stock cubes)
500ml semi skimmed milk (2 HeAs)
28g corn flour (5 syns)
salt
pepper
frylight
water

Method
--------
Wash and slice mushrooms & x2 onions
Spray large saucepan with sprylight and fry mushrooms, onions and crushed garlic
Once fried, add stock (x2 oxo cubes diluted in 2 pints water), cover and simmer
In a separate saucepan add x2 pints of water, x2 crushed oxo cubes, peeled and halved potatoes and x2 onions. Boil until vegtables are soft and then blend.
Add onion & potatoes stock to mushroom mix.
Blend cornflour with milk and then add to mushroom mix.
Simmer until thick and add salt & pepper to taste.

This makes around x5 large bowls of soup.

I have just made this and its delicious.
 
That is soooo sppoky, I have just been doing a search for mushroom soup so thankyou...xx
 
It may work with canned mushrooms - but as they are generally canned in brine and therefore have a vinegary taste, I don't think it would be as nice. But you never know!
