Pebbles + the gangs great grub recipes

Scan bran chocolate cakes.

5 scan bran
1tbsp golden syrup
28g cocoa powder
6 tbsp sweetener
3 beaten eggs

Soak scan bran in little boiling water then drain off any excess, mash . Add other ingredients Mix and divide into 12 muffin cases. I baked mine in halogen for 8-10 mins or do them in microwave Ok so they aren't choc chip or double choc muffins but served with a squirt of light cream on top and some fresh fruit and a mug of tea, they're actually ok .

POTATO PEAS, BROCCOLI & SOFT CHEESE FRITTATA
---------------------------------------------------- --------------
390g potatoes, peeled boiled and sliced - I used new pots
A tub of light soft cheese any variety
A cup of peas, and or cup of sweetcorn,
3 cubes of frozen spinach defrosted and strained.and or Couple florets of cooked broccoli left overs.
60g cheese
5 eggs beaten

Place cooked potatoes in a flan dish, sprinkle peas sweetcorn, spinach and broccoli on top.

Beat the eggs, melt soft cheese in microwave to a thick sauce, beat in the eggs then pour over potatoes.

Grate the cheese on top and bake until set and brown

Tonight's dinner was delicious -

CHEESY POTATO , ONION AND PEA PIE
------------------------------------------------

For 2 servings
14oz Potatoes
1 Onion
1 Leek
handful of peas
1 garlic clove
sprinkle of thyme
2 eggs beaten
85ml vegetable stock ( I used a veg stockpot and 100ml hot water)
84g reduced fat cheddar or 60g normal

Boil potatoes and mash up, set aside and spray large frying pan with frylight and fry onions, leeks & peas for 6-8 mins.
Add the mash, garlic, thyme, eggs, stock and half the cheese,
mix together and put in an ovenproof dish and sprinkle the rest of the cheese on top and bake for 20 mins on gas 5

SPAGHETTI / PASTA CARBONARA

Cook spaghetti or tagliatelle as instructions,
meanwhile cook 100g chopped bacon in frylight , for 2 mins,
add 4 cloves garlic crushed, stir fry til cooked.
Drain pasta add bacon and 3 beaten eggs ( hot pasta will cook egg mix)
add 50g Parmesan, season and toss.
Divide spaghetti between 4, garnish with flat leaf parsley and more Parmesan. Serve with side salad.

PAN FRIED SEABASS WITH PANCETTA, FENNEL AND LEMON ZEST, CRUSHED NEW POTATOES WITH PARSLEY AND SEA SALT

2 Seabass fillets
1/2 tsp fennel seeds
1 lemon
3 tbsp chopped pancetta cubes


New potatoes
Sea salt
Splash of white wine vinegar
Tbsp chopped parsley
Slug of olive oil

Cut the potatoes into cubes but keep the skin on.
Cook in a pan of simmering salted water until just tender, about 10-15 minutes, and then drain.
Add back to the pan with the parsley and some seasoning and crush lightly with a masher or the back of a fork.
Add a splash of white wine vinegar and a slug of olive oil and gently mix in.
Add more of each if it needs it.
Sprinkle over more parsley and some sea salt crystals.

Pan fry the pancetta until browned, remove from pan and set aside.
Add Seabass fillets , skin side down and hold a wooden spoon on them to flatten for a couple of seconds.
Grind the fennel seeds in a pestle and mortar until broken down Sprinkle fennel over fish from a height along with some salt and pepper.
Add zest of lemon then keep aside to make lemon wedges for serving.
When skin is crispy, remove from heat and flip fish over, return pancetta to the pan and heat through.
Serve with veg, salad of choice. And a wedge of lemon.

454g pack of mince
1onion finely chopped
2 cloves garlic finely chopped
1 small carrot grated
1 celery stick finely chopped
1 red chilli chopped
1 tsp Chinese 5 spice
1/2 tsp cumin
1 tsp chilli powder
1/2 tsp paprika
3 tbsp tomato purée
240g can kidney beans
400g can chopped tomatoes
1 large spring onion
Allowance of cheese grated


Spray a pan with frylight , cook onion, garlic, celery , carrot and red chilli, for 3-4 mins until beginning to soften
Add beef, Chinese spice, cumin, chilli, paprika and cook for a further 3-4 mins

When beef is browned add kidney beans, puree and tomatoes, bring to boil And simmer for 20 mins, add seasoning to taste. Serve topped with grated cheese And chopped spring onion. sw Wedges and chopped salad

MAGIC PORRIDGE
- scrum tiddlyyum. Give it a go if you haven't.
Basically add a muller any flavour ( can use other low fat yogs) to 28g porridge oats ( a b choice) mix really well and place in fridge overnight. When you take it out in morning it will be creamy and yum. You can eat it warm or cold I preferred it cold as it was too sweet wen warm


CHICKEN IN A POT
Syn free on Red
2 carrots sliced
2 onions sliced
2 celery stalks sliced
3lb whole chicken
1 tsp salt
1/2 tsp black pepper
1/2 cup water or stock (Bovril)
1/2 tsp dried basil
Put carrots, onions, celery into slow-cooker add whole chicken.Top with salt, pepper and water or stock. Sprinkle basil over top.
Cook 8-10 hours on Low or 4-5 hours on High
Defo giving both these a go this week.. Anything in the slow cooker is a YES from me at the mo especially.. Never would have thought to do a whole chicken in there tho... Assume its OK to put the chicken into the halogen over after for 10-15 mins to crisp the skin???

Hi , usually 4 of us as a rule. Though sometimes just the 2 of us . Let me know if there's any in particular and I'll come back to you. The chilli above served 3 of us but would do 2 a large portion . I'll add it to each listing thanks

Yeah the chicken does need browning , so I would say it'd be fine in the halogen . I've done it by browning in a pan before but Hogsmill would be better . The theory is - skin should be off really but I keep it on cos the kids love it . Xx

Was gona say I'd worry it'd be too dry.. But with the stock, it wouldn't really would it?! Think I'll do it as per the recipe first and then decide :) xx
 
Yorkshire pudding batter mix ( I usually make my own but for SW it's easier to calculate syns this way. )

Made up the batter and it made 5 small toads Each covering 2 sausages.
Batter mix = 5.5 syns. Check depending on make of mix. I used aunt Bessie's


1 pack batter mix
Joes sausages ( or similar no/ low syn to your choice)

Part cook the sausages then add mix and cook until brown And risen.


Syn free onion gravy
-----------------------
Serves 2

1 onion chopped
1 garlic clove chopped finely
500ml water
2 beef oxo
Tsp thyme
Splash of balsamic vinegar

Spray a pan with fry light and cook onions and garlic for 2 mins, mix the oxos and water, then add a few tbsp to the onions to prevent them sticking.
Keep adding more until onions are softened.
Then add remaining mix along with a splash of balsamic and the thyme.
Bring to boil then reduce heat and allow to simmer , preferably for 30 mins until reduced .

And for my next trick.......,

Teriyaki chicken - use marinade for beef, salmon, pork too.

Mix the following:
2 crushed garlic
1 inch piece ginger grated
2 tablespoons tomato ketchup
2 tablespoons soy sauce
1 tablespoon Worcestershire sauce
Salt pepper

Spoon onto meat and cover, leave in fridge for 2 hrs minimum.
I used chicken Breast and sliced them in half

Preheat oven cook 15 mins

Boil pasta , then stir in philly light , sliced mushrooms and a grating of garlic n chilli salts.

I've not made this,.... But I'd reckon lazy garlic is fine.. Its crushed garlic so i'm sure it would be :)

tracys Diet coke BBQ sauce

I carton passatta
1/2 of 500ml bottle diet coke/pepsi
I onion chopped
1tsp garlic powder
1 tsp onion granuals
1tbsp worchester sauce
1tbsp balsamic vinegar
2tbsp of tomatoe purée
1/4 tsp of chilli powder
1/4 tsp dry mustard powder
2chicken stock cubes
Salt + pepper

Cook onion in frylight till soft.

Add diet coke , then rest of ingredients and cook until you get the right consistency .

Adjust the seasoning and play around with the ingredients to suite your taste,as this is a recipie I came up with oneday by just throwing some stuff together !!

I use this with mince,diced pork ,sausages and even sw new York chicken and it's yummy :)
